Winemaking and Viticulture

Much of the unique character of this wine is developed in the vineyard, low yielding spur-pruned vines with only the best of the Cabernet grapes are selected and picked in the cool of the night to ensure fruit is delivered at temperatures less than 20 degrees. Fermentation is on skins in open top fermenters with subsequent maturation in predominately French oak barrels for 22 months prior to bottling.

All the fruit is sourced solely from Shaw Wines Murrumbateman vineyard, an area renowned for production of premium cool climate wines. Stelvin closures are used for freshness and to ensure long term quality.

    Graeme calls what he considers his best red of each vintage Merriman and this cabernet sauvignon is the 2016 flagship. It registers 14.5% alcohol and has purple hues, bouquet garni scents and intense, ripe blackberry front-palate flavour. The middle palate brings in Maraschino cherry, licorice, peppermint chocolate and vanillin oak and the finish shows chalky tannins. Team with fillet mignon and cellar for 10 years.

    There is a heap of stuff happening with the aromatics here. Satsuma plum, plum conserve and a little wiff of mint and tobacco (Alpine cigarettes maybe?). There’s an abundance of dark fruit flavours on the palate, which displays mid-weighted poise and precision due to deftly-handled oak and a tannin structure that frames up the wine beautifully. There’s a lot going on here, in a good way!
    Drink to 2036, 95/100 points.

    Dense purple/black colour. A minty bouquet united with prune and cloves. The texture is smooth, full-bodied, rich and replete with flavours of wild plums, vanilla and spice. Oodles of tannin meld seamlessly with high alcohol and a finish that lingers.

    You have to be careful with Canberra cabernet. It is not the easiest grape to grow near the nations’s capital and it requires some serious dedication and hard work to get it right, which Shaw Vineyard Estate have done here.

    Here you have some classic cool climate cabernet characters – perfumed red and blackcurrant fruits with violets thrown in and quality oak sitting underneath. It is elegant and understated in the mouth with layers of leafy cedar and blackberry fruits well integrated with some well integrated tannins. It is close to peak but everything is in place so it will easily last past its tenth birthday.
    Drink to 2028, 93/100 points.

    Highly perfumed. Black currant pastille, just picked off the tree bay leaf, cassis with grated chocolate and comforting old leather. Impeccably balanced with elegant black fruits framed in tight, velvety tannins and well judged oak that supports the fruit superbly and fine varietal leafy mint. Showing persistence with restraint and very long earthy finish.
    94/100 points.
