The Semillon grapes are left on the vines well beyond normal harvest time, this allows the Botrytis Cinera also known as Noble Rot to attach to the grapes causing them to shrivel, deeply concentrating the flavours, sugar and acid. This wine is only lightly oaked to create a light fresh style.
All the fruit is sourced solely from Shaw Wines Murrumbateman vineyard, an area renowned for production of premium cool climate wines. Stelvin closures are used for freshness and to ensure long term quality. This wine will age gracefully further developing the characteristics renowned of this type of wine.
