Winemaking and Viticulture

Much of the unique character of this wine is developed in the vineyard, low yielding spur-pruned vines with fruit harvested in the cool of the night to ensure fruit is delivered at temperatures less than 20 degrees. Fermentation is on skins in open top fermenters with subsequent maturation in predominately French oak barrels for up to 22 months prior to bottling.

All the fruit is sourced solely from Shaw Wines Murrumbateman vineyard, an area renowned for production of premium cool climate wines. Stelvin closures are used for freshness and to ensure long term quality.

    The nose is loaded with blackcurrants and blueberries with a hint of mulberry leaf. The palate is rich with ripe dark berry fruits with a balanced lick of tannin. Top stuff this! Enjoy this with a chargrilled premium cut of beef.

    Dark, deep, purple colour. The bouquet is intense, minty, herbaceous, brambles and clove. Dry palate, flavours show initial signs of maturity, tomato bush, blackberry pie, bay leaf and toast. Full whack of tannin sits comfortably with ripe flavours and a full body, smooth texture and a decent finish.
    Cellar to 3032. 93/100 Points.

    I always thought the main Red Wine for the Canberra region was Shiraz, that is until I tried Shaw’s Cabernet Sauvignon. This wine is deep garnet colour with an aroma of blueberry and blackberry, a fine palate of cassis, blackberry and mint, long finish . A well balanced beautifully made wine.
