Tasting Notes

Winemaking and Viticulture

Much of the unique character of this wine is developed in the vineyard, low yielding spur-pruned vines with fruit harvested in the cool of the night to ensure fruit is delivered at temperatures less than 20 degrees. The fruit is then lightly pressed and drained and only the free run juice is used to produce this elegant wine.

The Semillon is sourced from Shaw Wines Murrumbateman vineyard, an area renowned for production of premium cool climate wines Stelvin closures are used for freshness and to ensure long term quality.

Made from 100% estate grown fruit, the 2021 release wines are a good example of why Canberra District is such a highly regarded region. Murrumbateman is 30 minutes drive from Canberra CBD and host to an array of stunning cellar doors.

The 2021 Shaw Wines Semillon Sauvignon Blanc is Spring personified, an awakening of your senses after the winter haze. Lychees, star fruit and perfectly ripe backyard limes. It’s dry, and crisp, and showcases why Canberra cool climate makes for bright, clean and pure wines. A lovely balance of the semillon elegance with the generosity of tropical fruit from sauvignon blanc.

Pair with snapper ceviche, avocado hunks and loads of lime and a peppery oliver oil.

Huon Hooke, The Real Review (September 2021)
Very pale colour and a super-fragrant new wine aroma, sweet confectionery nuances – herbs and lemon, while the palate is zesty and fruity, with a sherbety acid tang and crisp but fairly abbreviated finish. A delicate, refreshing dry white for drinking young. Dring to 2025.

Brent Lello, Sixty Second Swirl, Yass Valley Times (April 2022)
While I’m a big fan of varietal wines – wines made from a single grape variety – I am increasingly searching out blended wines, where two or more varieties work together to create a wine that seems greater than the sum of its component parts.
One such white wine blend is Semillon with Sauvignon Blanc – these wines offer up the best of both worlds to create a compelling tasting experience.
A great example of this is the subject of this week’s “swirl” – the Shaw Wines Semillon Sauvignon Blanc 2021 – A very smart wine from a quality Yass Valley producer. In the glass, this “SemSav” is pale straw in colour with a bright gold flash from within. A swirl reveals freshly cut pineapple, green mango and passionfruit with a sprinkle of freshly cut grass. After a while in the glass, green apple and citrus aromas chime in. On the palate, it’s lively and crisp with apple and lime juice flavours and a zip of acidity that leads to a refreshing finish and a need for another mouthful.
We enjoyed our bottle with Thai Red Curry of Chicken, and it would go well with other Asian inspired dishes and fresh seafood straight from the grill.
